At Balaji Dosa Live, we prepare Uttapam using the same time-honored techniques passed down through generations, ensuring an authentic taste and texture in every bite.
Unlike dosas which are spread thin and crispy, Uttapam uses a thicker layer of the same fermented rice and lentil batter, creating a soft, spongy texture similar to a fluffy pancake. The magic happens when we add fresh chopped vegetables directly onto the batter as it cooks on the tawa. The vegetables - onions, tomatoes, green chilies, and fresh coriander - become embedded in the Uttapam, creating little pockets of flavor and a beautiful, colorful presentation.
The key to a perfect Uttapam lies in the batter. We use the same fermented rice and lentil batter as our dosas, but we use it at a slightly thicker consistency. This allows the Uttapam to rise slightly as it cooks, creating that characteristic soft, fluffy interior while the bottom becomes golden and slightly crispy.
